Tasting
The first nose is expressed in perfect classicism; the notes of juicy pear, crème fraîche, anise, baguette bread, accompanied by an elegant hint of foliage, generate a feeling of all summer generosity.
After a few moments the expression becomes even more elegant. We perceive floral notes, seaweed, as well as a hint of praline. We thus oscillate between land and sea.
The attack on the palate is quite vinous, marked by a beautiful intensity and the caress of effervescence. Then, the wine reveals its fullness and delivers a delicate fleshy sensation. The acidity, accompanied by the dosage, is fresh and delicious at the same time. As for the effervescence, well integrated into the body of the wine, it adds volume. The whole generates a tender texture, very comfortable on the palate. When heated, the wine gains in texture, it becomes creamier.
The finish, very clean and long (around 8 seconds), is also tangy, chalky and very slightly saline. It tenderly ends its evolution with gourmet aromas of white peach.
